AJI-NO NAMBAN ZUKE
(deep-fried scad with marinade)
Aji-no namban zuke, deep-fried scad with marinade Ingredients (4 servings):
16 aji (scad)
10 cm leek
5 cm carrot
1 cucumber
Flour
Oil for deep-fat frying
Marinade:
1 cup vinegar
4 tbsp sugar
1,5 tbsp soy sauce -
2 red hot pepper
Sake

Preparation:
1.Put aji on cutting board. Cut it's belly up starting with fin and eviscerate it. Pour fish upon sake (3 tbsp), mix by hands and live for a while.
2. Chip the leek and the carrot. Slice cucumber diagonally and then chip it. Deseed red hot pepper and chip it. Put vegetables and marinade ingredients in cup.
3. Warm oil a bit. Roll fish in flour and fry on a small fire about 10 minutes. Take the fish out and put it on paper towel to move excessive oil away.
4. You can eat fish at once till it hot: just put it on the plate, cover with marinade and decorate with vegetables. But you can cover fish with marinade and place in refrigerator for a while to let fish get soaked and become more fragrant.
