Tempura
Tempura

Tempura is a well-known dish all over the world. This is vegetable and seafood, dipped in the batter and deep-fried in boiling vegetable oil. Completely different ingredients are prepared for making tempura. The typical ingredients for tempura are squid, sweet potato, renkon (lotus roots) and other. If tempura served with rice the dish refers to tendon.

Ingredients:
Seafood (shrimps, ыquid etc.)
Vegetables (mushrooms, eggplants, pumpkins etc.)
For pastry:
2 eggs
2 cups ice water
2 cups flour
For sauce:
4 tbsp soy sauce
5 tbsp sake
3 tbsp grated daikon radish

Preparation:
1. Whisk eggs in a bowl. Add ice water. Be sure to use very cold water. Add flour in the bowl and mix lightly.
2. Lightly dip ingredients in the batter and immediately fry them in oil. Big difference in temperature between ingredients and oil is essential for crusting.
