Yokan (Mizukashi)
Ingredients:
300 g yamatoimo
1 kanten
2 cups water
150 g sugar
1 tsp food color tablets
1 tsp vinegar
Preparation:
1. Clean yamatoimoto and place it in a bowl with water and vinegar. Divide and boil together. Then filter it.
2. Wash kanten with water and place it in a bowl with water by pieces. Heat up until kanten thaws. Then add sugar and yamatoimo. Remove acerbity and cook for 2-3 minutes more.
3. Add food color tablets and filter. Pour it in a box. Cut it when harden.
