Sea-urchin lives in the sea on solid rocks. Its body is covered with needles. Sea-urchins are spread all over Japan. There are about 100 species of them. Inside a sea-urchin's body there is a substance of yellow color - sex glands called "caviar" that are eaten.
Sea-urchins eat seaweed that's why they have strong sea smell. Sea-urchins living in the places rich in seaweed are filled with good caviar. One-year old sea-urchins before spawning have very good caviar rich in nutrients. And this caviar is the most valuable.
Ingredients (4 servings): 320-400 g. rice
80 g. steamed sea-urchin's caviar
1,5 tbsp of soy sauce
Sugar to taste
2 tbsp water
1 fried nori
Wasabi to taste
Preparation: 1. Mix soy sauce with water and sugar and bring to the boil. Put sea-urchin's caviar into the boiling water, hold it there for 1 minute so that it doesn't fall apart and then pull it out of the water.
2. Slice nori.
3. Put boiled rice in a rice bowl pour it with a small amount of the broth, dredge with hashed nori, put sea-urchin's caviar on it, pour with the broth once again and then add wasabi.
