Rape chirashi-sushi (crumbly sushi)

Rape chirashi-sushi Ingredients:
4 servings

Rice - 2 glasses
Rape flowers - 1/2 bunch
Carrot 5 cm lengthwise
Gobo 6 cm lengthwise
Dry shiitake - 3 items
Soy sauce - 1 table-spoon
Mirin - 1 table-spoon
Sesame - a little
Su for sushi:
Vinegar - 250 ml
Sugar - 1/2 tea-spoon
Salt - 2 tea-spoons
Kombu for dashi - squares 3 cm on side put in vinegar.

Preparation:

  1. Cut gobo and carrot into small particles. Keep gobo in vinegar for 10 minutes.
  2. Dip shiitake in water and keep for 3 hours. Take the stems away, cut into small pieces. Don't pour out water.
  3. Put gobo, carrot and shiitake in small pan and boil in water residuary after mushrooms. Add in water mirin and soy sauce.
  4. Add su for sushi in cooked rice.
  5. Boil rape flowers, cut into small particles and sprinkle with salt.
  6. Mix rice with vegetables and mushrooms and sprinkle with rape flowers and sesame.
