Rape chirashi-sushi (crumbly sushi)
Ingredients:
4 servings
Rice - 2 glasses
Rape flowers - 1/2 bunch
Carrot 5 cm lengthwise
Gobo 6 cm lengthwise
Dry shiitake - 3 items
Soy sauce - 1 table-spoon
Mirin - 1 table-spoon
Sesame - a little
Su for sushi:
Vinegar - 250 ml
Sugar - 1/2 tea-spoon
Salt - 2 tea-spoons
Kombu for dashi - squares 3 cm on side put in vinegar.
Preparation:
- Cut gobo and carrot into small particles. Keep gobo in vinegar for 10 minutes.
- Dip shiitake in water and keep for 3 hours. Take the stems away, cut into small pieces. Don't pour out water.
- Put gobo, carrot and shiitake in small pan and boil in water residuary after mushrooms. Add in water mirin and soy sauce.
- Add su for sushi in cooked rice.
- Boil rape flowers, cut into small particles and sprinkle with salt.
- Mix rice with vegetables and mushrooms and sprinkle with rape flowers and sesame.
