ZARU SOBA
Zaru-soba Ingredients (4 servings):
4 portions of soba
Dipping sauce:
6 tbsp soy sauce
400 ml dashi
2 tbsp sugar
Seasoning:
1/2 leaf fried nori
4 tbsp leek
4 tbsp grated daikon
2 tbsp wasabi

Preparation:
1. Prepare sauce for dipping noodles. Mix dashi, sake and soy sauce and bring to boil. Then stop the heat and set aside. Pour the mixture in another pan and cool down in a fridge.
2. Boil noodles in much water. Wash cooked noodles in running water. Place noodles in a frail to drain it well.
3. Put noodles in plates and sprinkle with fried nori. Serve with a dipping sauce and seasoning.
