KAMO (TORI) NAMBAN SOBA
soba noodles with duck (chicken) meat
Kamonamban-soba
Ingredients (4 servings):
4 soba portion
400 g duck (chicken) chest
30 g spring onions
2 pieces thin omelet
4 sweet boiled mushrooms
50 g mitsuba (parsley)
Dipping sauce:
6 tbsp soy sauce
400 ml dashi
2 tbsp sugar
Seasoning:
1/2 leaf fried nori
4 tbsp leek
4 tbsp grated daikon
2 tbsp wasabi

Preparation:
1. Prepare dipping sauce. Mix dashi, sugar, and soy sauce and bring to boil. Then stop the heat and set aside. Pour the mixture in another pan and cool down in a fridge.
2. Boil noodles in water. Wash prepared noodles in running water. Place noodles on a frail to drain it well.
3. Boil a bit duck (chicken) meat, mushrooms, leek, and cut omelet.
4. Prewarm noodles in boiling water before eating. Let the water flow down and put the noodles in plates.
5. Put the duck (chicken) meat on top and pour with the broth. Sprinkle nori.
