KITSUNE UDON
Ingredients:
Boiled udon 4 servings
Kakuage 8 pc
Aonegi (leek) 1 pc
Udon-dashi
Kombu 20 g
Dried tunny 40 g
Sababushi 30 g
Water 2 cups
Preparation:
1. Prepare sauce for udon.
2. Warm up dashi for sauce, add sugar, mirin, usukuchishoyu and bring it to boil.
3. Pour water in a pan, put udon there. When water steams a little, make fire smaller and simmer for 10-15 minutes. When water becomes steaming again put prepared udon on a tray.
4. Warm up a pan with water, where udon have been boiled. Put udon and add aburage and hot sauce.
5. Decorate with leek.
