Soba gaki jiru
Ingredients (4 servings):
60 g. buckwheat noodle
40 g. matsutake
1 aonegi
3 g. tororo kombu
120-130 ml boiling water
Salt to taste
600 ml dashi
40 ml usukuchishoyu
30 ml mirin
Preparation:
1. Pour buckwheat noodles with boiling water and stir it up with chopsticks.
2. Peel matsutake mushrooms.
3. Cut matsutake into four parts, salt and grill it.
4. Slice an onion.
5. Pour dashi in a pan and heat it. Add noodles using a spoon.
6. When everything is ready noodle ball should rise to the surface. Add soy sauce and mirin.
7. Put matsumake and noodles on a plate and add tororo kombu.
8. Matsutake has a twang. It disappears after washing. It is better to wash it in warm water.
