Toriseiro
Ingredients (4 servings):
250 g. chicken thigh
1/4 tsp salt
2 pieces leek
Tsukejiru
Vegetable oil
600 ml dashi
1/2 tbsp sugar
1 tbsp sake
4 tbsp soy sauce
2 tbsp mirin
350 g. buckwheat noodles
Preparation:
1. Remove excess grease from chicken thighs. Salt and grill on a high heat for 10 minutes (if it is one-side grill then grill for 8 minutes one side and for 5 minutes another one).
2. Slice leek. Mix it with vegetable oil and grill on a high heat for 5 min.
3. Cut fried chicken into sogogiri and slice leek.
4. Put the ingredients for tsukejiru in a pot. Heat and add chicken meat and leek.
5. Boil buckwheat noodle in boiling water. Then wash it in ice water.
6. Put buckwheat noodles on a plate. Add tsukejiru with meat.
