Satsuma jiru (soup made from satsuma)
Ingredients (4 servings):
200 g. chicken thigh
80 g. Gobo
3-4 pieces satoimo (taro)
80 g. daikon
80 g. carrot
1 leek
1/2 tofu
80 g. soy paste (miso)
4 cups dashi
Preparation
1. Cut chicken thigh butsugiri (into big parts). Salt and wash with water.
2. Cut satoimo into langiri (big pieces). Cut radish and carrot into 5 millimeters long lines. Cut leek into butsugiri of 3 cm long. Cut govo thinly and place it in a pan with water.
3. Bring satoimo to a boil in salty water.
4. Put chicken, satoimo, gobo and carrot into dashi and simmer for 10 min. Then add other vegetables.
5. Add soy paste and fried tofu.
6. It is important to add water into dashi first in order to get taste.
