This tender rice soup with crab meat digests well and warms the body. It is very suitable to be served on winter evening. Zosui is considered good meal for the sick. For this soup not only crabs but also chicken, salmon and many other ingredients are used.

Ingredients (4 servings):
4 cups boiled rice
120 g. crab meat
8 mushrooms
Eggs
Celery to taste
7 cups dashi
Salt to taste

Preparation:
1. Put rice in gauze and wash it in cold water. Let the water flow down.
2. Take crab meat to pieces and remove all the bowels. Slice mushrooms. Do up eggs.
3. Bring broth to the boil in a large pot. Add salt, rice and mushrooms. Bring to the boil again and add crab meat. Slowly pour eggs in the pot so that they cover the surface of the liquid. Dredge it with leaves of celery. Cover the pot.
4. Take the pot off the fire and leave it stand until eggs reach the condition of omelet.
