Shabu-shabu
Shabu-shabu Beef with vegetables and tofu boiled in a boiling hot broth.

Ingredients:
700 g. beef
4 leaves chinese cabbage
120 g shungiku (vegetable chrysanthemum)
2 leeks
8 mushrooms
6 cups dashi
Sauces:
Ponzu-shoyu (vinegar sauce) or Goma-dare (sauce with gingili)

Preparation:
1. Pour a large pot with dashi for ? of the volume and bring to the boil.
2. Cut vegetables. Slice beef.
3. Boil vegetables.
4. Dip beef slices one after another into the boiling hot broth. For a fine taste remove foam from dashi.
5. Pour some sauce into a rice bowl for shabu-shabu (ponzu or goma-dare) and dip vegetables and meat into this sauce.
