TONYUNABE
Tonyunabe Ingredients (4 servings):
1 l. soy milk
1 l. dashi
1 pack tofu
1/4 head white Chinese cabbage
500 g sliced pork
2 bunches enoki mushrooms
1 bunch shimeji mushrooms (or honey fungus)
2 leeks
Bigarade juice to taste

Preparation:
1. Cut tofu into 8 parts. Cut Chinese cabbage into large pieces. Remove roots of mushrooms and sort them by small bunches. Slice leek diagonally into small pieces.
2. Pour dashi and soy milk into a pot and warm it up. When the liquid starts boiling add vegetables and meat ingredients. Boil until the meat color changes.
3. Tonyunabe should be eaten with Bigarade juice.
