Kamonabe / Torinabe
It is a soup with dashi, duck (or chicken) meat and vegetables.
Ingredients (4 servings):
500 g duck (or chicken) meat
1/4 head cabbage
1 tofu
5-6 stewed mushrooms
2-3 leeks
1/2 carrot
20 cm kombu (for dashi)
Sauce:
Daikon oroshi (grated daikon) to taste
Ponzu to taste
Green onion to taste
Preparation:
1. Cut duck (chicken) into eatable pieces.
2. Cut Chinese cabbage into pieces of 4 cm, leek - diagonally, carrot - in disks. Soak mushrooms, remove their hard part and cut into pieces. Cut salad into pieces as well.
3. Put kombu into water and bring to the boil. Before water starts boiling take out kombu. Put duck (chicken) meat into the broth, remove the foam and boil.
4. Add the remaining products and boil for a while. Put into dishes and serve with sauce.
