Buta kakuni
boiled pork cubes
Ingredients:
600 g pork
Butter to taste
50 g sliced ginger
12 leeks
4 tbsp green peas
Mustard to taste
Broth:
400 ml dashi
200 ml sake
3 tbsp sugar
100 ml soy sauce
Preparation:
1. Cut pork in cubs of 6x6 cm. Warm up butter on a pan and fry pork cubes from all sides.
2. Boil pork for 1 hour in large amount of water.
3. Put pork tightly into a pot add dashi, sake, ginger and boil for 10-15 minutes. Then add remaining spices and boil on low fire for 30 minutes. Turn off the fire and let the pot cool down.
4. Boil heads of little onion in hot water for 3 minutes.
5. Turn off the fire before eating, add leek and boil for a while. Add green pea at the end.
6. Pour with sauce and serve with mustard.
