Saba-no miso-ni (scomber boiled in miso)
Ingredients (4 servings):
100 g. fillet of scomber
30 g. ginger
4 leeks
Broth:
100 ml sake
100 ml water
3 tbsp. sugar
80 g. miso (soy-bean paste)
1. Cut the skin of the scomber diagonally.
2. Pour fish with hot water and remove the smell.
3. Cut ginger and leek.
4. Put scomber and ginger into a pot, pour water and sake in it, cover with a lid and simmer on high heat. Remove scum from the broth.
5. After the scomber is prepared, dissolve miso and sugar in a broth and simmer it on a low heat for 5 minutes.
6. Sprinkle leek on the simmered broth and stop the heat.
7. Before eating put prepared dish on a plate and pour it with the broth.
