The first tsukemono (Japanese pickled dish) appeared in Japan in the 8-th century. In those times tsukemono has been cooked with salt. It was very expensive dish and also inaccessible for simple people. In the ancient book it's written about 7 different types of tsukemono of the Nara's epoch. So, this fact shows that in those times there were a plenty of types of the tsukemono's cooking.
In the Edo epoch (the 17-th century) tsukemono began to be sold in shops. It is Edo epoch when the basic kinds of tsukemono (takuan, bettara zuke, nozawana zuke, nara zuke etc.) appeared.
