Ayu sugatayaki
Ingredients:
4 pieces ayu (fresh-water fish)
Salt
3 leaves
2 tbsp vinegar
1 tbsp sugar
Marinaded ginger

Preparation:
1. Scale fish and wash it with water. Remove innards.
2. Dry it up and salt.
3. Put sheets in a pan. Add vinegar and sugar.
4. Spit fish and salt.
5. Place it on a plate. Add marinaded ginger.
