Unaju
Unaju, grilled eel on rice
Ingredients:
Unagi (eel) - 1 pc
350 ml soy sauce
100 ml sake
50 g sugar

Preparation:
1. At first prepare "tare" sauce: mix soy sauce with sake and sugar and boil thoroughly.
2. Cut the fish lengthwise, move insides out, and unfold fish into the shape of plate.
3. Grill unagi holding it with metal or bamboo brochette and saucing with cooled "tare" sauce.
4. Serve unagi on boiled rice.
