Japan is the country with very soft climate. That's why a lot of plants and mushrooms are cultivated there. Kinoko (mushrooms) means "shadow of a tree". The Japanese eat mushrooms very often.
Japanese cuisine can't exist without mushrooms. They are used in every nabemono dish. Mushrooms are rich with vitamin C, which promotes reception of calcium in an organism and strengthening of bones. Mushrooms also promote decrease of parameter of cholesterol.
 Matsutake

Shiitake mushrooms are widely used in Japan. Shiitake is the traditional product, which is cultivated artificial. Dried shiitake are used in cooking of Japanese broth called dashi.
Matsutake are the most expensive mushrooms in Japan. It's impossible to cultivate them in artificial conditions. In autumn they are served in stewed way in clay pots. One matsutake mushroom costs 10.000 yens.
