Hirame
Hirame (halibut)

Halibut is considered as the tastiest fish with white meat. Halibut has a very large mouth with sharp teeth. Halibut's eyes are located at the left side. This fish has simple smell and aggressive character. The season of catching is from summer till winter. A halibut, caught in this period, has very high flavoring characteristics. As the quantity of halibut in natural conditions is limited, dishes, made of this fish, are very expensive. Low maintenance of fat is one of the attractive characteristics of halibut.

 

Karei
Karei (flounder)

Unlike halibut, flounder (karei) is not so aggressive. But it has very strong sea smell.
