There is one saying in Japan -"A rotten perch is a perch anyway". In Japan perch is considered as the king of sea world. This fish is served during different celebrations and weddings. Fried or boiled perch can decorate every table. A fresh perch enriches any set of sushi or sashimi. Dishes with perch and rice are very popular.
The tastiest perch is at the period of sakura (Japanese cherry) blossoming. There are many versions of perch. In Japan their catching is concentrated in the coastal waters of Okinawa and Chiba prefecture. However, perch is even more often imported.
Sea perch is practically non-wasted product. After eating the meat people cook broth of perch bones and pickle its head.
