Approximately 1500 years ago master Kobo (famous Buddhist leader) returned from China to Japan and settled in Kyoto. He decided to find a place where it was possible to learn the secret religion Shingon. Looking for a lonely place, removed from the capital, he went round all the regions of peninsula Kii and Yamato. Finally, he chose the mountain Koyasan.
Kobo asked for permission of the emperor Saga to make Koya the place for learning religion Shingon. The food of Koyasan monks included goma-dofu.
This dish made of tofu is very simple, but, at the same time, tasty and nutrient. Koyasan ,one of the three sacred mountains, still keeps this tradition.
