Hiya-yakko is also called mizu-dofu or yakko-dofu. The word "yakko" was added to this dish in the period Edo (1603 - 1868). Yakko is a name of samurai's servant. It is said that square emblem on clothes of the servant reminded tofu. So, that is the reason, why in the name of the dish the word "yakko" has appeared.
There was another name of hiya-yakko - mizukai. Regarding one of the versions, this dish was brought from China by the man who came to Japan to learn.
You will enjoy hiya-yakko in summer heat. When you eat it you should pour it with soy sauce with ginger.
