Shu (vinegar)


The ingredients for shu

There are plenty of vinegar types in the world. Every alcoholic drink may turn out to be vinegar. Rice vinegar is very popular in Japan. It is made of Japanese sake.

Manufacturing of rice vinegar came from China to Japan with the fermentive technology in III-VII centuries. In the Edo period (XVI century) vinegar began to be accessible for simple people with soy paste and soy sauce.

Version of vinegar

Grain vinegar. Ferment vinegar, which contains one or more than two types of grain.

Rice vinegar. Grain vinegar made of rice. Vinegar made of crude rice is called kurozu (black vinegar). It is also considered as rice vinegar.

Apple vinegar. Apple wine is made of apple juice. Then vinegar acid is added.

Grape vinegar. The grape vinegar is made as result of fermentation of wine. There are vinegars made of red and white wine.


Shu

Fruit vinegars. There are not only grape and apple vinegars. There are also date vinegar, vinegar made of persimmon etc.

Ferment vinegar. There are some vinegars, which are made of sweet sake.

Synthetic vinegar. This vinegar is made of dissolved acetic acid with addition of chemical flavor substances. It is not manufactured for home utilization.

Vinegar and health

Vinegar helps at tiredness, lumbago. It is also used in dietary feed, prevents infringement of menstrual cycle, helps at allergic diseases, strengthens allocation of hormones, warns occurrence of atherosclerosis and heart diseases, strengthens liver, normalizes blood pressure, raises appetite, strengthens bones, prevents flue and pain in throat, fungus, food poisoning, lack of vitamin B1 and anemia.

Utilization of vinegar
  • Disinfections of a kitchen board. You need to wash a board well and wipe it with a cloth, soaked in vinegar. Then you have to wash it in water one more time.
  • Clearing of contaminations of drains. Mix made of handful of dense soda and 1/2 cup of vinegar is filled in drain.
  • Removal of smell from varnished things. Wash them in water, where you have washed rice and add vinegar.
  • Removal of smell from aluminum utensil. You have to clear it using hot water with vinegar.
  • Removal of rust from silver and copper utensil. You need to clear it using soft cloth, soaked in vinegar.
  • Clearing of things made of stainless steel on a kitchen (watch the previous line).
  • The prevention of burning on a new fried pan. Before using a pan you need to drop some vinegar on it.
  • You can put some vinegar in a boiling sea kale. It becomes softer after that.
  • Improves taste of soy sauce, cooked for sashimi.
  • If you try to put some vinegar in mustard, it can be very piquant.
  • During cooking of fried eggs you need to drop 2-3 drops of vinegar and eggs won't burn in a pan.
  • If you cook rice with addition of some vinegar, it stores longer.
  • If you drop some vinegar on dried boiled fish, unpleasant smell may disappear.
  • Helps to remove dandruff.
