Wild-growing burdock is widespread in the north of Eurasia. It has moved from China as curative herb before X century. Japan is the only country, which cultivates burdock. Europeans and Americans don't like the specific smell of burdock root and special sensation on teeth during eating. Gobo is very popular in Japan among young people as the product for vegetable salad.

Tall gobo is cultivated in Kanto, where arable ground consists of volcanic ashes and pumice. These lands are deeply ploughed and have good drain. But in Kansai plowed land is not deep. This difference of the ground has led to the cultivation of tall and short gobo in different places.

Special sensation on teeth during eating causes the maintenance of inulin (version of carbohydrate) and fibrous cellulose. Burdock wins the first place on maintenance of these substances. Inulin and cellulose promotes clarification of stomach.
